Pectin plays many roles in dairy products. It has strong water-retaining capacity, provides structure and texture to set yogurt, controls viscosity and mouthfeel in stirred yogurt, and protects protein during the heating process of yogurt drinks, achieving stable product texture and perfect taste.


Lactic acid is a natural component of dairy products. It has a mild sour taste and good antimicrobial effect. As an acidulant, it has been widely used in flavored fermented milk, cheese, ice cream and other foods.


Calcium lactate is added to milk and fermented milk drinks as a mineral fortifier.


The recommended addition amount of lactic acid is 0.15%-0.25%; the recommended addition amount of calcium lactate is 0.25%-0.35%.
