Glucono delta-lactone (GDL) or gluconolactone, an inner ester of gluconic acid, is a naturally occurring ingredient commonly used as a coagulant in tofu making, a leavening acid in bakery, a mild acidulant in cheese and meat products, and a sequestrant in some food applications. The European food additive number for it is E575. It is kosher, halal, vegan and GMO free.

Glucono-delta-lactone (GDL) is obtained by oxidizing glucose into gluconic acid or its salts through purification, desalination, decolorization, concentration and crystallization. It is a multifunctional food additive. It is a food additive that performs a number of different functions in prepared foods and supplements. It can be used as a protein coagulant, acidifier, expander, preservative, seasoning, chelating agent, or color preserver. GDL is a non-toxic white crystal or crystalline powder, almost odorless, first sweet and then sour, easily soluble in water, and decomposed into chemical substances at 25ºC. it is used as sour agent and stabilizers and coagulators in the food industry.


Application

  1. Tofu(Bean curd)Coagulating agent: Tofu texture white and tender, without bitterness, no protein loss

  2. Compound baking powder

  3. Milk Gelatinizing agent: Use in yogurt or cheese,the gel strength of milk formed by acidification is about twice hat of the fermented type.

  4. Quality improvement agent

  5. Acidifying agent: Use in vanilla extract, chocolate, banana and other sweet sherbet and jelly
